BIRCHER MUESLI WITH TROPICAL FRUITS

Fabulous tasting and enough to last a few weeks, breakfast can be fuss free.

Wake up sleepyhead, eating this breakfast will give a great start to the day. This is another fuss free, easy recipe that you can make enough to last a few weeks and keep in the fridge in a sealed container.

I love summer, as the long hot days spread before us and foods are simple, fresh, often raw and fuss free, leaving more time for those warm summer nights, early beach walks and swims which all bodes well for one happy pooch and one happy, healthy, family. 19seventiesgirl is all about having a good life, a healthy life, but also making it as easy as possible.

 

Bircher muesli is a soaked overnight in the fridge to soften nuts, oats and seeds, making it more digestible. In other seasons, I add a grated apple before I soak but in summer I like to maximise the array of tropical fruits available. Do I have a favourite?…………..of course, 19seventies girl, can’t go past mango and passionfruit when in season, they are my absolute weakness.

Add milk of choice, I like to use almond or coconut milk, then take my bowl and enjoy the early morning sunrise when I can. There is nothing quite so special as walking on the beach at sunrise, as the golden sun peeps over the horizon to herald the new day or having and early morning coffee outside as day breaks.


I like to double, triple or quadruple the recipe, always have done and many a person has been seen eating my muslie who normally aren’t muesli eaters, so extra is always needed. I made this in the 1970’s ( sans quinoa and chia seeds) and I have returned to making it now.

BIRCHER MUSLIE

You need:

Quantity: enough for a large batch.

5 cups of rolled oats, spelt wheat flakes or quinoa flakes, or a mix of all of them

2 cups of nuts, raw almonds, walnuts or brazil nuts, roughly chopped

300 grams unsulphured dried apricots, chopped

1 1/2 cups seeds, such as pumpkin (pepitas). sunflower, sesame and flax seeds

1 cup flaked coconut

1/2 cup chia seeds, optional

2 teaspoons ground cinnamon

To make:

Place all the ingredients in a large container or bag and shake to combine. Store in the fridge in an airtight container.

Before, you go to bed, sleepyhead, put your muesli into serving bowls for the next morning and just cover with milk of your choice. Cover and refrigerate.

Top with fresh fruit of your choice or mix in a grated apple or pear and we are done.
